Barrel aging beers takes taste to new level

The other day I asked Pete Crowley, president of the Illinois Craft Brewers Guild and Haymarket Brewing brewer, what’s so special about wood. To be clear, we were talking about the eighth annual Festival of Wood and Barrel Aged Beer, which will take place Saturday at Bailey Auditorium (1340 W. Washington Blvd.), and I was wondering why the guild felt the need to devote an entire festival to beers aged in barrels.
The answer, he said, is that wood just might be the most interesting element a brewer can add to a beer.
“Wood takes beer to a level that can only be achieved through contact with wood,” he said.
