There is a renewed interest these days in sherry, not least among bartenders, who are creating cocktails at a breakneck pace using various expressions of the fortified wine. This has produced some liquid gems, particularly those drinks that capitalize on sherry’s reliable affinity with the agave spirits tequila and mezcal.
But however good these drinks may be or how popular they become, the title king of sherry cocktails, in my opinion, already belongs to the sherry cobbler, a drink that was invented roughly 170 years ago and achieved worldwide popularity during its long reign in the mid- to late-19th century. Crowned with fruit and ice, it looks impressive. Low in alcohol, it goes easy on you on a hot day.
