Forget pomegranate vodkas and cinnamon-spiced rums. The new frontier in flavored spirits is whiskey, with producers and bartenders infusing it with everything from cherry to ginger.

Beam Global Spirits & Wine Inc., based in Deerfield, helped kick off the craze a couple of years ago with Red Stag, essentially its Jim Beam bourbon with cherry flavoring. This fall, Minneapolis-based Phillips Distilling Co. is introducing Revel Stoke Canadian Whisky, embroidered with a wintry mélange of vanilla, coriander and other flavors.

“We’ve wanted to spice up the whiskey category, pun intended,” CEO Dean Phillips says.
